morro de ternera

morro de ternera con vinagreta de verduritas: morro means snout for pork, but apparently, if it's beef, this is the part where the head is joined to the neck... any idea what this cut of meat is called in English?

Isabelle, if you google "cow lips" coupled with "recipe" you'll find more recipes than you ever wanted to know about, given the ingredient. Maybe we can have a potlock for the next powwow here in Spain and give it a try.

I think you should check on this. There is something else called mollejas that are glands up around where you are describing when referring to cattle or sheep, but morros in the case of ternera......I think it must be lips.

I'm pretty sure what you are looking for here is lips, particularly in Spain and if you are talking about ternera.

Cow's/calf's lips doesn't come up anywhere on google and sounds a little gruesome... It's supposed to be the part right below the chin.... "Chucked" doesn't work either as it's the top part, same reason... Sorry!

is what I would call this
