morro de ternera con vinagreta de verduritas: morro means snout for pork, but apparently, if it's beef, this is the part where the head is joined to the neck... any idea what this cut of meat is called in English?

calf/cow lips
I'm pretty sure what you are looking for here is lips, particularly in Spain and if you are talking about ternera.

Note from asker:
Cow's/calf's lips doesn't come up anywhere on google and sounds a little gruesome... It's supposed to be the part right below the chin.... "Chucked" doesn't work either as it's the top part, same reason... Sorry! |
Sounds absolutely vile but I stand corrected. Thanks a million. |

veal/beef muzzle
is what I would call this
‘What’s good today’, I ask Sandro, Giovanni’s son. ‘Veal muzzle’, he says, chewing, half a rubbery bovine nostril hanging from his mouth, for effect. ‘Or’. ‘Or the mutton that just came in. Like you like it. Very dark meat. Very flavourful. Tripe? It's excellent. No, but try the muzzle. You love it, and it loves you. Lip to lip.’ ‘Eight portions of mutton then. Big dinner party tonight’.
