This comes before someone's name in a clinical trials document. The paragraph then goes on to list this person's qualifications and professional positions. Does it stand for Doctor en Ciencias and if so, would it usually be left as per the Spanish title or does it stand for something else?

I think you're right about the meaning (see web ref for example) but in US academia DC stands for Doctor of Chiropractic so could cause confusion.
