Hemo=blood
lymphopoesis=production of Lymphocytes

Based on the morphology of the word, the course no doubt dealt with the production (and probably function) of lymphocytes. They are a type of white blood cell and are frequently commented on in the media when speaking of HIV (the 2 types of lymphocytes are B-cells and T-cells). Unfortunately in English we don't have the same flexibility in derivational morphology as in Spanish, so a rephrasing is needed. I think the phrase above should convey the original meaning accurately. And although it may be acceptable to use the cognate in very scientific literature (which itself is doubtful) the client probably wants the course titles in his/her transcript to clearly convey the curriculum of each course.
