As far as I can see it has something to do with this

Is this just a fancy name for asparagus rolled in bacon?

On the other hand in a recipe, where precision is more important than presentation, you would generally find entries such as "Asparagus with Ventreche" or "Asparagus stuffed with Ventreche" etc., with further explanation somewhere.

For example, in any decent French restaurant the menu items would be in French, possibly with a full set of the translation alongside or in a seperate menu, but invariably with lost meaning.

I agree with Tony up to a certain point, that it is tricky to decide what to translate and what not to. It really depends on the context.

asparagus with / in bacon

ventrèche is really uncured belly pork, so not literally bacon as such; however, I think that would probably be the closest way to describe it in EN.

Not sure about the 'rolled' bit though...

OK, so Bourth has found that ventrèche can indeed be cured — though the variety we have down here isn't usually; definitely like streaky bacon, though
