agree  elysee: j'ai souvent traduit des textes concernant des vins et on parle en effet de FINALE (terme utilisé en oenologie par les spécialistes du domaine) - pour les vins mais aussi le whisky ou alcools de ce genre (voir ma note info)

Interestingly, a bit of Googling reveals that certain sites regard 'fin de bouche' and 'finale' as the same thing, while others make a specific distinction between them!
