Snap freezing (or cook-chill or blast freezing) is the process of cooking meals until they are almost done and then rapidly chilling them.
The process involves the preparation and cooking of meals at a central factory, rapidly chilling them for storage until they are needed. I assume you took the definition of "snap freezing" from wikipedia, I know for a fact that "ultracongelación" is the appropriate term for "flash freezing", which according to wikipedia is synonymous to "blast freezing" which according to your source is the same as "snap freezing".
Only problem is that your definition of snap freezing doesn't seem to actualy freeze but instead only chills.
