I am translating a guide on colour coding for cleaning at a large bakery. It’s about cleaning tools carrying different colours, depending on the area where they are used, e.g. mops and mop wringers used in the canteen are green, but those used to clean the toilets are red. This helps to avoid/limit cross-contamination. The author lists a number of specific areas in the bakery. These are:
‘’Yeast house’’
Silos
Despatch
Production
Canteen
Toilets
Front and back yard
I am not clear about the ‘’yeast house’’. Would this be a kind of storage area?
Any help would be greatly appreciated.

Yes, it is a storage area or system for yeast
Whether liquid or dry, yeast has storage requirements. Though I have never heard of a 'yeast house', I feel certain that it is a room, or system (containers) for the storage of yeast. It would be imperative to keep the utensils used in the yeast area separate from others, as it contains live culture.
Also, if this is going into US English, 'dispatch' is used as opposed to 'despatch', though they have the same meaning.

: you have to store the yeast away from other mixes as it will cause fermentation, so it is in its own storage room, Sometimes it is a little room away from the main building, hence the name "house".... see yeast repository also, but mainly in Bio organics.

Bank is if you just use one type, library if you have several yeast types you draw from.

: Hi Jose, I believe that the terms 'yeast bank' and 'yeast librarary' are used most commonly in the brewing industry, and it is processed, stored and used differently than in a bakery environment.
