The antioxidative activity of wort and beer, called the total reactive antioxidant potential (TRAP), was determined by spectrophotometric observation of the decline of peroxy radicals generated with 2,2(prime)-azobis(2-amidinopropane) dihydrochloride. The analysis technique was automated using a spectrofluorometric centrifugal analyzer. The TRAP value responded particularly well to beer antioxidative polyphenols. The TRAP assay was also useful for studying oxidative changes during the brewing process, especially mashing, and has been utilized as a key supporting analytical method for the new antioxidative production system of beer production. La actividad antioxidativa del mosto y de la cerveza se llama el potencial total de la reactividad antioxidante {Total reactive antioxidant potential (TRAP)}. Esta actividad fue determinada por la observación espectrofotométrica de la disminución de peróxi-radicales generados con 2,2(prime)-azobis(2amidinopropano) diclorhídrico. La técnica de análisis fue automatizada por un analizador espectrofluorométrico centrifugal. Se mostró que el valor TRAP correspondió particularmente bien a los polifenoles antioxidativos de la cerveza. Fue también útil el ensaye TRAP para el estudio de cambios oxidativos que ocurren durante el proceso cervecero, sobre todo durante el braceado y ha sido utilizado como un método clave de análisis de apoyo para el nuevo Sistema de Producción Anti-oxidativo de la elaboración de cerveza. separación de residuos (lautering) Explanation: Hola, Por más que busqué, no encontré un equivalente en español. Las páginas en español que se refieren a este proceso lo denominan como "lautering". Te sugiero ponerlo como "proceso de separación de residuos" y entre paréntesis, "lautering". Puedes ver las referencias que te copio abajo. Suerte!
