"Ventilation" here is definitele "breakdown" or "distribution", etc. My income, for instance, is "ventilé" into revenue from translations, revenue from the sale of cocaine and smuggled tobacco, money from the 3 girls working the RN26, and the odd stolen car sale.
"Pavé" can be a "block" (as in a boxed off section) on a bill say (you might have a "pavé adresse"), or here it might be a "block" of customers meeting certain set criteria.
