On a menu: "Gänserollbraten mit Backpflaumen, Maronen und Marzipan gefüllt, Rotkohl und Petersilienkartoffeln"

disagree Cetacea : A "Rollbraten" is made with deboned meat (otherwise you couldn't roll it), while a roast goose means the whole bird (or parts of it), including bones and skin.

then a roast goose roulade would be the English or you just leave it as Rollbraten. agree that it's deboned meat.

rolled goose

After checking several phrases, I'd say "Rolled Goose" because "Rolled Ham" is Rollschinken. Most of the menus I saw left it in the German version (then it's up to the waiters to explain...)Happy Holidays!
