this seems like a very specific term that should not just be translated literally!
Ausser mir, dem Neuen, gab es noch den Druckergesellen Wolfgang, den Setzer Herrn Tischer und die drei Hilfen... Aber insbesondere Herr Tischer sollte zu meinem Mentor werden. Als "Schweizer Degen," so bezeichnet man die "Gesellen," die sowohl Schriftsetzer als auch Buchdrucker gelernt hatten, ist er sicherlich mitverantwortlich fuer meine Liebe zu alten Buechern.

Granted I'm not in the printing business or anything, but it looks to me like there's no English equivalent. If you'd really like to avoid a literal translation (and explanation,) I can suggest "jack of all trades." Not quite the same thing though, as you'll see from the links I've attached. Viel Glueck!
