In a recipe for "Consommé de volaille safrané au caviar de grenade et coco."

This is in the list of ingredients. Any idea how to translate it? I don't think "calcium" works because I would personally have NO idea what to buy. Thanks!

This term appears in molecular cooking. Mention of alginate also helps.

Salt

I'm just guessing, although it could be bicarbonate of soda (baking powder). Never heard either called calcium, though.

calcium chloride

Any calcium salt would do (I think...) but calcium chloride is used to do alginate pearl.

calcium lactate is also used for the same purpose, so it would be safe to keep it as 'calcium' and add the specific salts in parenthesis (chloride, lactate,...)
