I think you'll find it simply means 'the name of the assistant is...' --- logically, I'd have expected a colon in there.

By the way, I assume they mean it is the SURname (family name), and I presume this \'assistante\' is a female whose surname is \'Pierre d\'Estaing\' --- NOT a male with the forename \'Pierre\' !
