The fat from cattle and sheep is known as tallow (French, suif; German, Taig). Sheep fat is rarely used for edible purposes because of the difficulty of removing its strong flavor and odor. It is widely used for soap and candle making and in lubricants.

: Since tallow can be bovine and ovine, I think "sheep" specifically is needed here.

: Same comment as to Denis. There are many kinds of tallow, e.g., vegetable tallow, so I think (which is difficultu for me) that "sheep" be included. In my most humble opinion...

Note that there are more specific terms that may be more appropriate if your context gets more specific:
"mutton suet"--If they are referring specifically to the hard fat extracted from the loins and around the kidneys
"sheep tallow"--If the suet has been rendered, then it would be sheep tallow.
