neutral Tony M : Yes, but the idea of 'stew' suggest it will have lumps in it, unlike a coulis, which is usually runny, I think?

Je pense que la texture et le goût sont fondamentalement différents de ceux d'une compote ou d'un coulis.

I've come across this term a lot recently in my menu translations, it seems to be in vogue at the moment with high-class chefs.

...and conveys perfectly the idea of its having whole lumps of fruit in.

mijotée

Juste une suggestion. Même si le terme est rarement utilisé pour le sucré, il correspond bien à la notion de cuire longuement et c'est plus "ragoutant" que ragout, non?
Compotée est aussi très bien. Je suis moins d'accord avec coulis, par contre.

neutral Tony M : Not really, simply because stewed fruit is not "cooked slowly for a long time" as a meat stew might be; it is lightly cooked, for as short a time as possible.
