: Interestingly enough, the regular dico definition of 'edulcorate' is 'sweeten' or 'make more palatable'', but it sounds like the opposite is meant here (extracting the sugars).

I must admit that I saw that definition as well. However, it is not about extracting the sugar as the following part of the sentence shows (um die Zuckerverluste zu reduzieren). Maybe wash out is an option that is not as ambiguous.
