'Geschäftskontakte und Projekte, die im Rahmen der Vorbereitung der Gründung der Firma von den Gesellschaftern benannt werden, unterliegen bis nach der Gründung von der Firma dem Kundenschutz.'
Basically, any information about business contacts or projects provided by shareholders while the company is being set up are subject to 'Kundenschutz' until after the company has been set up. What is Kundenschutz?

Customers are protected until the company is set up. Otherwise, any of the shareholders could contact the customers to close any business for himself and not for the benefit of the company.

priviledged information

I have a feeling that the word "Kundenschutz" is not being used correctly in this text. What I think they mean is, that the information about contacts and projects, which are revealed during the set-up of a business, remain priviledged, i.e. cannot be used by the people founding the company in question. The key word for me is "bis nach der Gründung". That means, the contacts and projects cannot be "Kunden" as yet, since the company does not exist, and they meay be approached until after the establishment is a fact.
