In termini strettamente chimici, come giustamente riassume Shera Lyn con redox (re-ductio/ox-ydation), laddove vi è riduzione (di un elemento) ce ne sarà un altro che si ossiderà. Però la fonte da tradurre sottolinea che c'è una maggiore propensione alla riduzione rispetto all'ossidazione enzimatica cambiando vitigno (uva).
Perciò ritengo utile separare.
Sennò bisognerà girare il discorso usando la traduzione di Shera Lyn p. es. così: "...different enzyme redox potentials will affect a greater tendency to dry up (wither/lose water) etc.".
