I think that it needs to be "virutas de foie GRAS" as otherwise it would surely be simply called "virutas de hídago¨. Furthermore, the high class restaurant also points to the missing GRAS.

as it's a high-class restaurant, I'm sticking my neck out that it would be foie gras (or an imitation) and not simply pig's liver, etc, normally known, even in restaurants, as "higado".
Of course, if it turns out to be common or garden liver, then you'd have to avoid "liver slivers" at all costs!!
