El diccionario Collins sugiere desmedido y desrazonable para unconscionable. Otra opción sería poco razonable. Sin embargo, unconscionable significa "shockingly unfair or unjust" (merriam-webster dictionary) así que me parece que injusto o muy injusto/sumamente injusto o algo así pueden ser opciones también.
