Does anyone know what these are in English. I think the latter is "mature cheese", but I don't know about the other.

I'd be tempted not to say 'old cheese' since it sounds a little funny in English, as if it's off!! It's not necessary in English, sinced aged does suggest it's been hanging around for quite a while (!) so perhaps you should just omit it all together?
