...I am unable to find any reference, could it be the roll that carries the die? (talking about die-cutting)

I think it is a roll that cuts dies, not a roll that applies dye.

Yes, Jack has got it right, I just wanted to use an answer to expand a bit on his excellent explanation.
In die-cutting, the paper is squeezed between the die (sharp bits sticking out) and the anvil (plain, just for pressure) in order to partly (or fully) cut it (think of sheeted labels, perforations, round- or fancy-edged cards, items with cut-outs, etc.) --- in the case of a continuous, web press like the one you're clearly dealing with, the sharp 'die' is actually made rolled up in the form of a cylindrical 'sleeve' (specific for each job) that fits over a pressure roller (part of the machine), and it presses against an 'anvil' that is also in the form of a roller, as is of course required to allow continuous web operation.
