agree  Juan Gil: Sin ninguna duda (yo hago pan en mi casa...) - el 'proofing' es el último levado, el último crecimiento antes de darle la forma a la masa y hornearla. También se usa 'fermentado/fermentación', pero Mariana lo dijo primero.
