I know 'quinte' is fifth, but 'juste'? 'true'? and I have also problems with the word 's'affaiblissant'(fading?) in the following sentence:
"Chaque quinte, s'affaiblissant, en montant la note grave sans changer le mouvement de la clef, permet a l'oreille de percevoir d'abord l'impression de la quinte juste,..."

In English we use the term perfect fifth, as opposed to an augmented or diminshed fifth chord or interval between notes.

s\'affaiblissant - possibly \'dying away\' or \'fading (away)\'. Alternatively, you could use the notion of diminuendo (the opposite of crescendo), but this would imply simply the changing volume and not necessarily a style of playing, which includes more than this.
