Italian term

invaiatura

Italian to English Other Agriculture see sentence
The "invaiatura and gramolazione" two distinctive activities connected with the olive oil producing phases.
Can anyone help in finding the term for "gramolazione" which is the mixing/kneading of the crushed olive's paste and "invaiatura", a ripened stage the olives reach before picking. I can only think of "turning" but is there another term for them?

I found this reference:

The grapes colour change, “invaiatura” in Italian or “veraison” in French.

Does it help?
