The "invaiatura and gramolazione" two distinctive activities connected with the olive oil producing phases.
Can anyone help in finding the term for "gramolazione" which is the mixing/kneading of the crushed olive's paste and "invaiatura", a ripened stage the olives reach before picking. I can only think of "turning" but is there another term for them?
