with the environment
I still beleive that this refers to "medio ambiente", the "ambiente" is dropped sometimes.

: I agree that "ambiente" is often dropped. The sentence would be more fluid in English if you were free to add something like "in the (physical) environment in which they developed/were situated."

with their surroundings / the natural environment
Medio: "Ambiente o círculo. Conjunto de circunstancias materiales o espirituales que rodean a alguien o en que se desenvuelve una persona o una acción". (Moliner)

I'm sorry I used the word "environment" at all - it will surely be misread! It would have been better to say
"with their surroundings / Nature", where Nature has a capital "N".
The point that the Moliner dictionary entry is making is, that their cosmovisión was nothing like what we understand by "medio ambiente". It was a pre-scientific world, where many inanimate things were alive and one full of unknown forces which needed to be placated. It was the all-embracing medium in which they lived and had their being.
I strongly feel that using "environment" without qualification is not correct here. If the paper is about Economics then this will hardly matter to the core argument - but it's starting off on the wrong foot all the same.
