Ingredientes:
500 grs. de carne de jaiba fresca
2 jitomates
2 cebollas grandes
4 hojitas de epazote
1 ramita de perejil
1 diente de ajo
4 limones
6 chiles serranos verdes
1 cucharadita de consomé en polvo
sal
Procedimiento:
Pique el jitomate, el ajo, el chile serrano y la cebolla todo finamente. Acitrone la mitad de la cebolla, y el ajo en poco aceite caliente. Cuando estén cristalinos agregue el jitomate y sazone con un poco de sal.
Cuando haya espesado un poco, añada la jaiba deshebrada para que se fría bien. Vierta agua suficiente para obtener un caldillo. Cuando el agua suelte el hervor, agregue el consomé en polvo, las hojitas de epazote y el ramito de perejil.
Deje hervir hasta que la jaiba esté suave. Sirva el caldillo con jaiba acompañado con jugo de limón y chile serrano picado al gusto. Retire previamente la ramita de perejil y las hojitas de epazote.
