agree  Carol Gullidge: yes, the word "salient" is used for this very purpose.//Certainly is! However, I think that the bit about "protruding rock" cd be misleading, unless you're thinking of it protruding on a horizontal rather than a vertical plane. I'd just go for "salient"

in case the "saliente" is where the "baluarte de los Mártires", and not the castle, is situated (maybe you can tell this from the context?) I would suggest "headland" or "ledge". "Ledge" is the term suggested here:
