the adjective thirst-quenching does not seem to have a noun ! I presume I have to talk about 'thirst-quenching properties' ? ANything better ?

Actually, in your particular case, I think you can indeed use it as a noun in its own right; since it is qualified by 'long-lasting', it makes it clear enough that it is being used as a noun — and don't let's forget that all this comes after 'promesses'; it would be hard to see how you could really say: "its promises of ... long-lasting thirst-quenching properties"

thirst-quenching ability
This seems to be the expression most widely used, lots and lots of ghits in inverted commas.
Some random examples:
