Italian term

siero-innesto naturale

Italian to English Science Food & Drink Food
The term is found in the ingredients of mozzarella cheese. I checked the dictionary and siero is 'whey', whereas 'innesto' seems to mean 'grafted'. But, I am not too convinced about it and I am pretty sure that there must be a specific English term.

Any help would be very much appreciated...

Thank you!

natural whey starter culture

I found a website specific to the manufacture of mozzarella cheese.
Example sentence:

Samples of raw milk, natural whey culture (NWC) used as starter, curd after ripening and final product were collected during a mozzarella cheese manufacture.
