"Estrogen increases in aging men (over 40) in large degree because it is produced from testosterone by a process called aromatization, which occurs particularly in fat cells.
In the aging male: Fat = Estrogen!
Reducing fatty tissue decreases the aromatization of testosterone to estrogen. Certain medications can also reduce aromatization. Testosterone is bound by Sex Hormone Binding Globulin (SHBG) and protein. It is 98% bound and only the free 2% fraction is active. Increasing estrogen levels causes SHBG to increase in the aging male.

As far as I see in this sentence it refers to the process, not to the enzyme itself.
