landing a respectable seventh place finish
...sor something along those lines. It doesn't just mean that he achieved seventh place, but that seventh place was quite a good placing (for him, under the circumstances, on that day...)

came seventh
he/she came seventh in the race
you´re perfectly right in your assumption.

: "came in seventh" would be my preference, but the infection caused him/her to "only" come (in)/place seventh. The "herausspringen" part would not be covered only by "came (in) seventh". Adding "still/nevertheless" would get it in that direction.

yes, that´s true. Doesn´t make it clear that it was actually an achievement (despite the infection)

came storming in seventh over the finishing line
Maybe it was scraping past the line in that position, but the viral infection changes the emphasis.
Example sentence:
Storming towards the finish line ... There are good match-ups all over the field, we have strong forward play
