The по indicates that the food is cooked in a certain style. i.e. country style chicken, or fish cooked in the egyptian way. The 'по' is a neat way to avoid these lengthy descriptions of various dishes. In Britain you will find that we use the french 'а la' on menus, as well. Mushrooms а la Grecque, to give you an example.

Only a suggestion
It seems to me, every name should be researched separately (try cooking discussion boards, if necessary) because most dishes are known under particular names which can be French, English, ethnic, whatever to avoid mistakes like "спагетти по-болонски" :-)

(Mind you, a lot of dishes that we believe to be traditionally Russian are in fact international (often French or English) and have their respective names in English. They would demand research, as well.)
