invigorates one's senses

I think a less litteral translation here is in keeping with the rest of the sentence. Other possible substitutions for "invigorate" could be "energize" or "rejuvenate".

4 KudoZ points awarded for this answer. Comment: "Thank you all for your comments - most of you were headed in the same direction as I, but added some nice ideas to the more literal path. However, I was hoping for a less literal translation which would capture the feeling the author conveys in the French and "invigorating, rejuvenating,etc..the senses seems to do that perfectly. Merci denoncourt et chapeau. "

defines sensations anew

"Pour des esprits chargés de souvenirs et d’images, la plage de cette ville redonne à la sensation sa véritable définition."

The idea, as I understand it, is that the visit in question makes the visitor feel again a certain type of/gives him back a/ sensation long forgotten. The author's sensation/feeling then gains its true value as such (is defined) through the experience. Now, to put that in nice English, here go some suggestions.

Redonner: five back, return, give again, restore

"The beach in this city defines/shapes (the word) sensation/sensations anew"
or
"gives a fresh definition of/reshapes what sensations are"

I hope my ideas help you!

Nothing in particular. I hope this translation will suit your expectations.

brings back true meaning to perception

sensation here should be perception, I believe, that is what is perceived by the senses.
