manual cropping

Sounds like a function with which you crop part of a graphic, and this function lets the user define the dimensions of the cropped section. "Manual cropping" the wording that is used to convey this meaning.

define yourself the screen section

For "selbst" there is no other expression in English. You will have to use "yourself", but I'd put it like proposed above.
