So.. they are definiteoly metal, and not some other material such as stone etc.

In fact.. there are several possibilities for both words individually, but the client has used them both here, implying a single device.
If its any help, the document discusses WC hardfacing of steel implements, the vast majority of examples of which are agricultural or construction tools.

La molazza è una macchina impastatrice e/o frantumatrice, per esempio è usata in edilizia per impastare malta (mortar). Il vomero (o vomere) è la lama (blade) che lavora la massa da impastare.

Ploughshare

A vomere is the blade part of a plough, the molazza is a stone mill piece otherwise known as a muller or a pan mill but how the two go together defeats me: i presume it describes a process by which the ploughshare is either sharpened or actually produced.

That's the best I can do.

I think molazza in this case means concrete mixer, the vomere is the blade or paddle that actually mixes the mortar.

Either of two flat, round stones used for grinding grain to make flour. The stationary bottom stone is carved with shallow grooved channels that radiate from the centre. The upper stone rotates horizontally, and has a central hole through which grain is poured. The channels of the bottom stone lead the grain onto the flat grinding section, called the land, and to the edge, where it emerges as flour. The best millstones are made from French buhrstone, quarried near Paris. In the U.S., quartz conglomerate, quartzite, sandstone, or granite is used. Stone-ground flour accounts for only a small proportion of milled flour today.
