trendy/contemporary osterias/bistrots

You can find any number of synonyms for trendy ( revamped, stylish etc). I wouldn't translate osteria as it is such an Italian concept (like bistrot in French or tavern/pub in English). In fact a bistrot is the French equivalent of an osteria. You could use (Italian bistrot) in brackets after osterias which English speakers are probably more familiar with.
