Here is my quandary: I have two recipes, and they are very dissimilar.
One is called Souffles au fromage en deux temps.
I'm tempted to call it two-step cheese souffles, but actually the souffles are prepared and cooked in one step ;-) but the notes after the recipe indicate that you may cook them, set aside int he fridge and reheat them later.
The other recipe is for spinach.
Dans une grande casserole, chauffer l'huile à feu moyen. Ajouter l'ail et le dorer légèrement. Ajouter les épinards et les cuire en trois temps en tournant ou en brassant jusqu'à ce que les feuilles s'affaissent. Saler.
My French-Canadian mother (who's an excellent cook, BTW) tells me it must mean quickly, in a few seconds, because spinach wilts quickly.

For the spinach one only: I'm thinking that since spinach cooks so quickly and quite often you can't fit all of it in the same pan before it wilts, that it's asking you to cook it in 3 batches (if the recipe calls for a lot of it).

- Cuisson en un temps : la farce crue est enveloppée et le tout est cuit. Autre variante, l’enveloppe est préalablement cuite et entoure un contenu cru, le mets ne subit pas de cuisson consécutive à sa mise en forme, comme c'est le cas des "rouleaux de printemps" de diverses cuisines asiatiques.
- Cuisson en deux temps : cuisson préalable de la farce, emballage dans une pâte, puis cuisson du mets.
- Cuisson en trois temps : la farce est cuite d'un côté, l'enveloppe d'un autre et une fois la farce enveloppée, l'ensemble subit une dernière cuisson ; les bricks à la viande d'Afrique du Nord en constituent un exemple.

: I am not guessing, but sending in the refs I have found, whether it makes sense or not. What I mean is that do you have any evidence that "en trois temps" = in a trice, based on any French language evidence you have found. I am intrigued, that is all.

The only evidence either way is what appears in the question, ie, that the omelette is made in 1 step. Otherwise, we're all guessing (I think!)/ Afraid not, but perhaps it should be "2 or 3 ticks" :)

Leaving aside (!) the deux temps / trois temps conundrum, you might choose "reheatable soufflé", since this is a rare characteristic for soufflés.
