law suit / claim

Le Docte mentions various options, from petition to claim, suit, procedure.
Here Ithink 'petition' is too soft.

in the event of an ex parte application

Or an ex parte complaint/summons/claim, depending on the jurisdiction.
Requete: Demande en justice contradictoire addressee a un magistrat. (Le Droit de A a Z)
Cornu gives a similar, though wordier, definition that I won't repeat here.

The sentence would read: "including in the event of summary proceedings, an ex parte application or multiple defendants". In this choice of forum clause the parties are trying to cover all the bases, stating that the Paris district court will have exclusive jurisdiction even in these unusual types of proceedings, where one could argue jurisdiction lay in another court, because the absence of the defendant, or the presence of multiple defendants, could raise questions about which court properly has jurisdiction. Here, the parties are dealing with those arguments in advance by saying that the Paris district court will have jurisdiction even in these unusual circumstances.

agree Charlie Bavington : Also supported by Bridges (if you see what I mean!)

neutral AllegroTrans : "ex parte" application means in the absence of the respondents )e.g. an emeregency injunction) _ I see nothing in the FR text to suggest this

I know. That is how 'requete' is defined, 'demande en justice... non contradictoire' III (civ. pro.). See Cornu, and the other dictionary I cited above. It also makes sense, since it's a situation in which a defendant could later challenge jurisdiction.
