I've seen a lot of different translations here - pollock, coley, coalfish, Atlantic salmon.


Opinions please - we're talking restaurant menus, not zoological terms!!

Translating fish names is a real can of worms (haha). If anyone out there has a real, authoritative glossary somewhere I would love to know about it.

Fillet of cod

According to Larousse Gastronomique, this is another name for the "coal fish", and is prepared in a similar manner. Also known as pollack (not "pollock").

neutral Michele Johnson : I know I'm nitpicking, but isn't cod different from coalfish/pollock? Launert biol. dict. lists cod as Dorsch or Kabeljau, at any rate Genus Gadidae. Seelachs is Genus Pollachius. I find the scientific names can be v. helpful. Pollock is fine by me!

agree Robert Sleigh : if it's for a restaurant menu, then fair enough. Who's gonna know the difference. I'm sure if you walked into a restaurant and asked for a fish of genus Gadidae you would be greeted with a blank stare. Cod.

neutral David Moore (X) : M-S might CLAIM that, but the fact is that "rock salmon" is a name given to many, many different fish, when they are sold as food. So you can never be sure what you are eating...

both pollack and pollock are admissble, but wouldn't they have said cod if they meant cod?
neutral Michele Johnson : 0 ggogle hits for "rock salmon filet"; my research indicates rock salmon = dogfish = Hundshai (Scyliorhinus caniculus), but my Launer biol. dict. gives Seelachs as Pollachius virens = pollock (as you later mention; I think this is right)

agree vptrans : Checked in Hering's Dictionary of Classical Modern Cookery -- Rock Salmon or Coal fish! Same preparation as Cod fish!

disagree Edith Kelly : I don't know the translation but I'm 100% sure that rock salmon is not Seelachs. In Ireland, one knows both, eats both, and they certainly don't look alike.
