I've found a few recipes that use "woodsy" -- and they have mushrooms among the ingredients!

: might not woodsy hint more at smoky flavour than sottobosco? "sottobosco", for me hints more at mossy and mushroomy...

forest aroma
for "sottobosco" I generally head for "forest" so "forest aroma" or "forest flavour" might be what I'd use.

If I found this definition in a manu, I would expect mushrooms in the sauce.

: yes, and I would say "fragrance of wild mushrooms", since the word "profumo" gives the idea of a sauce flavoured with mushrooms but without "pieces" in it.
