thank you Phil.did you check my references? they are good references, no 'one person's creations'. fact is, it's a relatively new word, and quite a 'fashion', so 'historic' culinary references are not easy to find

Comunque, adesso è più chiaro. Il secondo suggerimento di Fiona potrebbe essere l'ideale.
100gr di tuorli
45gr di zucchero
240gr di latte di riso (io latte)
4,5gr di colla di pesce
120gr di cioccolato fondente al 70%
mettere la colla di pesce a bagno in acqua fresca,
bollire il latte, unirvi i tuorli sbiancati con lo zucchero e riportare sul fuoco fino a 85°,
togliere dal fuoco e aggiungere la colla di pesce strizzata, unire il cioccolato spezzettato e mescolare con un mixer a immersione,
colare la crema in uno stampo più stretto di 1cm dello stampo per il montaggio della torta che è da 20cm,
mettere il cremoso in freezer
