As Patricia says, we use the phrase "to table a motion", ie to propose something, but that is usually in meetings or debates, more often political ones

it's a phrase of many shades! I think something that reflects his role in bringing forth the music would make it clearer. Definitely, in English the table analogy doesn't say very much for the context.

I think the closest answer so far is Marina's - it can mean many things, but here the basic idea is that of "creating"/"bringing forth"....
It's also in contrast with what comes before.."Valiéndose casi exclusivamente del sonido acústico.."
i.e. using limited means - only acoustic instruments - he has "managed to come up with" a wide variety of songs/styles.
Here I'd use "he has produced intimate...." or even "succeeded in producing..."
