neutral emiledgar : sweetbreads are always from calves and usually, in English, they are just called sweetbreads. The sweetbread is the Thymus gland and it shrinks during adolescence.

neutral Michael GREEN : The term is correct - and the dish is delicious! - but sweetbreads can be "crusted" with a variety of things (pistachios, herbes, etc) so I think you need to decide how to translate "sablé" (which no contributor has succeeded in doing so far)
