I assume "star gazing" it's a hobby for this person in particular. Therefore in Spanish it sounds have the word "aficionado" (fan).

As my peers say, this could be a translation in the context of someone actually looking up to the stars. If, however, you are referring to a person obsessed with famous people (like the maps to the house of the stars that offer 'first-class star gazing chances'), the term would be 'admirador' o 'fanático de las estrellas'.
